Lady Grey Lavender Scones


While I don't consider myself to be a kitchen expert, there are a few recipes that I came up with after more or less heavily tweaking with the basics. This scones recipe is one of them; I cannot deny that the two bold flavours (lavender and tea) were a bit of a risk, but I'm glad I took it. I also chose to replace a stick of butter with half a cup of Greek Yogurt to make them a little healthier. 
And believe me, there's nothing like an afternoon writing session with a pot of tea (Lady Grey or another kind), and a few of these delicious beauties right out of the oven!

Ingredients (for about 36 small round scones)
1/3 cup of sugar + 2 tablespoons
2 cups of flour
1 teaspoon of baking powder
1 pinch of salt
1 stick of butter, frozen
1 egg
1/2 cup of Greek yogurt
2 bag of Lady Grey tea (I personally like it pretty strong, but feel free to only use one bag)
10 drops of food-grade lavender essential oil

Preheat oven at 400 degrees Fahrenheit

In a large bowl, stir together the flour, sugar, salt and baking powder.Grate in the butter.

In a separate bowl, whisk together the egg, Greek yogurt, lavender oil and tea leaves.

Mix all the ingredients together with fingers until you obtain a homogeneous (but not too smooth) mixture.

Sprinkle work surface with flour. Roll down the dough and cut circles with a cookie cutter (alternatively you can cut them in triangles).

Lay the scones on a parchment-paper-lined baking sheet; sprinkle tops with sugar, and bake for 18 minutes.

Ive never seen scones made with lavender tea, sounds really interesting! Will have to remember this for the next time im doing baking for an afternoon tea!
