Farfalle with home-made pesto

April 12, 2012

Can you think of anything more comforting after a long day than a nice bowl of pasta with a glass of wine, in front of your favourite TV show? I, being a girl who have been loving pasta ever since I was introduced to solid foods as a baby, can't. Pesto being one of my favourite sauces, I have decided to make my own, with a little twist on the traditional recipe. I used spinach, which makes the dish more healthy and guilt-free (slightly, but still!)
Keep reading after the jump for my recipe!

Ingredients: (for about 1/2 cup pesto sauce)
2 cups of washed spinach leaves
1/4 cup olive oil
1/4 cup pine nuts
1/4 cup almonds
1/4 cup shaved Parmesan
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon salt

Put the ingredients all together in a food processor and blend until you have a thick and smooth paste. Adjust salt and basil to your taste.
Refrigerate in a small airtight container with a layer of olive oil on top.
