Les petits choux

A while ago I decided to make choux à la crème. I always loved to treat myself with those back in Paris, along with macarons, so I thought, why not make them from scratch? I used both this recipe and instructional video (in French) to compare both and get the technique and consistency right. The best part of it was that once you grasp the tricky part (and this is why it's important to watch the video) it becomes really easy.
I've made a few changes, using only water, not milk too, like the French recipe. Also, be really careful on how much egg batter you add. The recipe says 2-3 eggs, but I've found out I only need about one and a half. I add my eggs tablespoon by tablespoon, because the dough can only too quickly become runny and ruin everything.
What I loved the most was the crème (that comes along with the choux). It was pure delightful comfort food. My family and friends loved the choux, and I've been baking more almost every day.
